WHEAT is used in a style of beer called wheat beer (not surprisingly!) most commonly the German "Hefeweizen" which refers to the wheat. It is used in place of some or all of the barley which gives it a much different flavor than the usual barley based beer. The wheat gives the beer a light flavor and pale color and a bit of sweetness.
HONEY is used in beer to give it a bit of sweetness, especially in some pale beer varieties like the "Honey Blonde Als" you may find at local breweries. Honey can give a bit of kick and aroma, and lighten the body.
IRISH MOSS is used to add clarity to the beer. It is known to coaglulate the break material so the beer looks crisp and clean and clear. This way you have less sediment in your glass which could distort the taste.
